This feature doesn't seem to be working or should I say I can't seem to get it to work.
I get the server running but it does not minimize, is there something that I am missing?
This is for a MOHAA Spearhead server.

Its not yet active sorry - a new GameCreate Client will be released "soon" that will support this feature.

When we have some time available, I do not have an ETA for you sorry - certainly not 6 months, but I do not want to provide an ETA.

While this feature is somewhat new, its not crucial to the performance of your game servers.

Is it possible to start the windows game servers as a backround running windows service?

Not at the moment nope.

Is there a solid reason for this? With regards to trouble shooting game servers, having it as a service (so you aren't able to see the server console) is pretty unhelpful.
